Here are a few essential tips when dealing with cleaning your grease trap.

Know your local laws and regulations

While the city your establishment may have its own regulations, all restaurants must follow those of the Environmental Protection Agency, EPA. Which states that every 90 days grease traps of food service establishments, commercial kitchens and restaurants, must be properly cleaned. If your kitchen is busy and generates a significant amount of food waste and FOG, (fats, oil, and grease), then it may be necessary to have it cleaned more often, usually every 30 to 45 days.

“Oil and grease interceptors and oil/water separators shall be pumped out completely at a minimum frequency of once every ninety (90) days, or more frequently as needed to prevent carry over of oil and grease into the collection system. Under the sink oil and grease traps shall be cleaned at a minimum frequency of once per week, or more often as necessary to prevent pass through of grease and other food solids to the collection system. Cleaning and maintenance shall include removal of materials from the tank walls, baffles, cross pipes, inlets and outlets.” City of Orlando.
